After receiving my food sensitivity results I was quite upset, as I was doing so well with my eating and creating recipes that some of those recipes contained tomatoes and most of the foods I was sensitive too. That night I wanted meatballs and I came up with a sweet and sour sauce to go with them. It turned out really good. I made enough for two adults and two children but your welcome to double this recipe. I didnt add apple cider vinegar because I'm sensitive to fermented foods right now but your welcome to add a tbsp to the sauce.
1lb ground beef
1/2 onion chopped
1 egg
1 tbsp coconut aminos
s&p
Sauce
2 red peppers diced
1 tbsp coconut aminos
1/4 cup honey
1/3 cup pineapple juice
1/4 tsp onion powder
Mix the ground beef with the onion, egg and coconut and aminos and pinch of salt and pepper. Combine meat mixture well and spoon small balls into a frying pan with a tbsp of olive oil. Cook until browned. Meanwhile in a saucepan fry two peppers until soft. Once they are soft scoop into a bowl to cool. Once they have cooled pour into a blender and puree. Pour the puree back into the saucepan and simmer. Add the honey, coconut aminos, pineapple juice and onion powder right away and stir. Simmer for five min. Pour onto meatballs and serve with zucchini noodles.
