This chilli was so delicious. Sometimes comfort food is needed through tough times and this chilli was definitely needed tonight. Although it has kidney beans in which I know is not paleo, sometimes kidney beans are needed and wanted and why not? I also serve my chilli with rice which we do once in a while. They were a perfect add to this recipe and you can always leave them out if you prefer. I ran out of tomato sauce so I used a jar of organic salsa refined sugar free and I will from now on do this because it made the chilli taste so yummy. you can also make this chilli in the crock pot, just cook the beef first and then add everything in to the crock pot with the cooked beef.
1lb of grass fed ground beef
1/2 an onion diced
1 red pepper
1 summer squash ( yellow zucchini )
1 can of kidney beans, no salt added ( optional )
1 or 2 jars of organic salsa no sugar added depending if you want more
1 tsp of chilli powder
1 tsp of cumin powder
1 tsp of cayenne powder
pinch of salt and pepper
Cook the ground beef on the stove in a frying pan until browned and cooked. Add the diced onion, red pepper and squash. Cook until the vegetables are soft. Add the salsa and stir. Add the spices and stir again. Add the kidney beans. Let the chilli simmer for ten minutes on low to let the ingredients settle and combine. Serve with rice or salad.
