I didn't have any almond flour as I am waiting for my shipment so I decided to make a nut free pumpkin apple square and these turned out delicious and my family love them especially my 11 month old baby girl. Try these out I know you will love them.
1 egg
1/3 cup of honey
1/4 cup of coconut sugar
1/2 tsp baking soda
1/2 cup of coconut flour
1 cup of pumpkin puree
1/2 tsp of allspice
1/2 tsp of ground cloves
1/4 tsp of cinnamon
1 apple diced into small pieces peeled and cored
1/4 cup of palm shortening melted
makes 15 squares
Preheat oven to 350. Place an oven proof dish full of water on the bottom rack of the oven. Beat the egg. Add the honey and melted palm shortening and mix well. Add the coconut sugar and mix. Add the pumpkin puree and mix. Add the coconut flour, baking soda and spices and mix well again. Add the apple pieces and mix well. Line a square dish with parchment paper to fit exactly. Pour the mixture into the dish and spread evenly. Place in the oven for 40 minutes. Cut the squares with a flat clean knife and use a spatula to take out each square carefully. let cool and enjoy.
