I made this dinner for my Mum one night and it was absolutely delicious and she loved it too. I used to hate mushrooms growing up and even as an adult, I'm not sure when I decided I liked them, but I am sure glad that I took that leap to try mushrooms because now I love them. Even though mushrooms are my highest sensitivity these ones didn't bother me as much as I thought they would. This recipe is very easy to make and I am sure you will enjoy eating them.
6 large portabella mushrooms
Tbsp of olive oil to drizzle
1lb of ground beef, grass fed
1 can of diced tomatoes
1 onion diced
1 tsp of Italian herbs
1 tsp of oregano
1 tsp of chilli powder
1 tsp of cayenne pepper
Salt and pepper
1 avocado sliced
Cook the ground beef in a frying pan. Add the onion and fry for a little longer unil onion is soft. Add the tomatoes and stir. Cook for about ten minutes and then add the spices. In the meantime drizzle olive oil onto the mushrooms and place on the BBQ. Cook for ten minutes. Take them off the BBQ and fill each mushroom with the ground beef mixture. Add cheese if you can have cheese and top with avocado slices. Enjoy!
