Sauces are my favourite, I'm a very saucy person he he he. I love sauces with meat and vegetables like Alfredo or tomato base sauces so I have used cashews as my Alfredo sauce in this recipe. It tasted so good.
4 zucchinis for the noodles
2 chicken breasts, diced
Italian herbs
1 small onion, sliced thinly on a mandolin
2 cloves of garlic, crushed
pinch of salt and pepper
1 1/4 cup of cashews previously soaked longer than two hours in warm water.
1 cup of water
Preheat oven to 200'. Line a baking sheet with paper towel. Peel the zucchinis and use a spiral slicer to make noodles. Place the noodles on the paper towel and sprinkle salt on top to draw the moisture out. Put them in the oven for half an hour to dry. Meanwhile cook the chicken and sprinkle Italian herbs, salt and pepper over the chicken. Saute until nice and brown and cooked through. Add the shaved onion and garlic and saute. When the zucchini noodles are done turn the oven off and place them in a frying pan to saute until they are a little crisp. Don't cook them too much just a little. Blend the cashews in a blender with the cup of water, I pressed ice crush for the cashews. Blend until the nuts are really small and well grinded with the water. They should look like a thicker cream, if not you can always ad a bit more water. Add the cashew cream to the chicken and onions and mix well. Simmer for a couple of minutes so that the onions and garlic can mix with the cashew cream. Serve on top of the noodles. Enjoy.
