My family and I eat a lot of chicken in our house so I wanted to do something different with the chicken. I first thought of stuffing it with goat cheese because I can tolerate goat cheese, but I knew goat cheese wasn't paleo and a lot of people can't eat it. I had a good look in my fridge and saw one pear left and thought about what I could do with a pear. Pear and honey go nice together so why not make a sauce out of it, and that's what I did. It went really nice with the chicken and bacon. We weren't feeling to hungry and my Husband and I ate it by itself, while my children had farm chicken nuggets and a veggie. They are very picky eaters and most nights I make separate meals for me and them. Time to give you this recipe, hope you enjoy it.
2 chicken breasts
6 pieces of bacon
For the drizzle
1 pear
2 tbsp of honey
1 tbsp of light tasting olive oil
Wrap the chicken breasts with the bacon, wrapping three pieces for each breast. Fry the chicken on medium heat. Meanwhile peel the pear and take the core out. Slice the pear and place in a blender with the honey and olive oil. Blend on low until pureed. Once your chicken is cooked place on a plate and drizzle the pear sauce over the chicken and serve with your veggies. Enjoy.
