Apple pie is definitely a Fall recipe especially when it's apple picking season in September. I made this pie so I was ready for Thanksgiving and I wanted to make sure I had a recipe ready to be made for when I have the Thanksgiving dinner at my house. The smell in the house when this pie is cooking is so good and makes me want to eat it all the time. This recipe is not hard to make and doesn't take long to prepare it.
Pie crust you need two batches of this crust
1 egg
1 tsp of vanilla extract
1/3 cup of honey
pinch of salt
2 cups of almond flour
2 tbsp of coconut flour
1 tsp of apple cider vinegar
Filling
2 tbsp of coconut flour
1/4 cup of coconut sugar
1/4 cup of water plus 1 tbsp
1 tsp of cinnamon
1/2 cup of palm shortening
4 apples cored, peeled and diced
Preheat the oven to 350.
Beat the eggs in a mixer. Add the vanilla and mix. Add the honey and mix again. Add the almond flour and salt and mix well. Add the vinegar and combine. Add the coconut flour and mix well. The mixture should look thick and almost like dough. Using a spatula scrape the sides into into a big ball. Place the dough onto a piece of parchment paper and then another piece on top of the dough. Using a rolling pin roll the dough out to the size of your dish. Grease the pie dish with a little palm shortening. Flip the parchment paper over so that the dough is now on the dish. Carefully lift the edges up so that the air is released underneath from air bubbles. Using your fingers knead the dough into place to fit the dish perfectly and then trim off any dough hanging from the edge. Place in the oven for four minutes or until slightly brown.
For the filling place the palm shortening in a saucepan and let melt. Add the rest of the ingredients except the apples and whisk until combined and slightly thick. Take the pie shell out of the oven when its ready and place the diced apples in the middle. Pour the sauce over the apples evenly. With the second batch of dough roll it out onto a piece of parchment paper and parchment paper on top. It doesn't have to be a big circle. Not too thick but not too thin either. Use a pizza cutter to cut strips out of the dough. Place four strips across the pie with a space between each one. Then add four more strips the other way so that you have a plaid type of look. Place the pie in the oven for 40 minutes or until the apples are soft. If the crust is browning too quickly you can place a piece of foil over the pie and cook. Take
