Cinnamon rolls were one of those treats that I did not like, I found them always too sweet and even if I did eat one I could never eat the whole thing. Until I made these cinnamon rolls. This recipe is so good, they are the right amount of sweet and my family and I could not get enough of them and I had to make a second batch. Try these rolls out and you'll see how good they really are. I didn't add any icing because the icing I was working on, but I found that they almost didn't need icing so we ate them without and they were very tasty. If you like icing on top I will create a recipe and add it to this blog. I used a bread attachment for the mixer instead of the beater, it is much easier.
June 15th 2014: I made these today and I realized there was too much honey in the dough, I have put less honey and coconut sugar and this worked out perfectly. I have made these changes to the recipe below. Enjoy
1 egg
1 tsp vanilla
1/3 of a cup of honey
2 cups of almond flour
2 tbsp coconut flour
4 tbsp coconut butter
1 tbsp cinnamon
3/4 cup of coconut sugar
1/2 tsp of cold water
ICING
2 tbsps of coconut butter
1 tsp of honey
Preheat the oven to 330'. Mix the egg in a stand up mixer. Add the vanilla and honey and mix well. Add the almond flour and coconut flour and mix well. It should start to look like a dough and become one big ball. Using your hands form the dough into a ball. Place a sheet of parchment paper on a flat surface and place the dough on top. Place another sheet of parchment paper on top of the dough. Flatten the dough slightly. Use a rolling pin to roll out the dough so that it is a circle. It doesn't have to be a perfect round circle, mine wasn't. The dough should be about 20-30cm in length. If the circle is a bit smaller that is also ok because you do not want the dough to be thin as it will crack and break when rolling. It should be thick. Melt the coconut butter with the coconut sugar and cinnamon for 15 seconds and stir until combined. Add the water if you want it a little goey but also this makes it easier to spread. The coconut butter will spread easily once melted. Take off the top sheet of parchment paper from the dough. Spread the butter mixture on top of the dough. Pull the bottom sheet of paper with the dough closer to the edge of the surface. I found this easier to roll the dough. Take the edge of the dough with the paper and pull the paper over the dough to create a roll. Keep pulling the paper until the dough is now a roll. Once you have a long roll you can cut the roll into smaller rolls. You can cut them as big or small as you would like them. Place carefully onto a lined ( parchment paper ) baking sheet and put in the oven for 10 minutes. You can top the rolls with your favourite icing or eat them without. Enjoy. For icing melt the coconut butter and honey together and spread on rolls.
