4 eggs
1/3 cup of melted palm shortening
1/4 cup of honey
1 tsp of vanilla extract
1 tsp of cinnamon
3 ripe bananas, mashed
1/3 of a cup of coconut milk
1 1/4 cups of almond flour
3 tbsp of coconut flour
1/2 tsp of baking soda
Preheat oven to 350. Place a dish of water on the bottom rack. Beat the eggs in a mixer and add the vanilla and cinnamon and honey. Mix well. Add the palm shortening and mix. In a separate bowl mix the bananas and coconut milk together and add the the egg mixture. Add the almond flour and coconut flour and baking soda. Mix well. Pour into a loaf pan lined with parchment paper and place in the oven for 50 minutes or until cooked through. Let cool nd enjoy
