Cauliflower and sweet potato soup today for lunch; creamy with a perfect taste that satisfied my craving today for warmth and comfort on a dreary day. This is one of many soup recipes to come and I am very pleased with this one. I hope you like it as much as I do.
1/2 a head of cauliflower 2 little florets to garnish
2 small sweet potatoes
1/2 an onion, chopped
2 garlic cloves, whole
1 carton of organic chicken broth
1 1/2 cups of water
1 tsp Italian herbs
1 tsp of fresh oregano
Pinch of salt and pepper
Parsley to garnish
Cut cauliflower into small florets and place in the 1 1/2 cups of water. Peel and chop the sweet potato and add to the cauliflower. Add the whole garlic cloves to the water. Simmer on medium heat for ten minutes. Add the chicken broth In a separate saucepan sautée the onion with the 2 cauliflower florets on low heat. Do not brown the onion. Remove the cauliflower from the saucepan and set aside. Add the onion to the soup. Keep simmering. Take a potato masher and mash the soft sweet potato and cauliflower together. Keep simmering. Add the spices and stir. Take the soup off the heat when it's thick. Let the soup cool for 15 minutes. Add the soup to a blender and press medium. The soup should be quite thick now.
