I miss oats and I am sure a lot of people on the paleo diet miss oats or a hot cereal with a touch of brown sugar. Seeing as fall is approaching this cereal is perfect for those cold days and the pumpkin and spice is delicious. Having left over pumpkin puree and soaked cashews really worked out today for this recipe.
1 1/2 cups of soaked cashews ( soak for 4 hours or longer)
1 cup of coconut milk
1 cup of pumpkin puree
1/4 cup of coconut sugar
1/2 tsp of allspice
1/4 tsp of ground cloves
1 1/4 tsp of cinnamon
Rinse the cashews and pour into a blender. Add the coconut milk to the blender and blend on low until the cashews are completely ground. Pour the pumpkin puree, coconut sugar and spices in a saucepan and add the cashew mix. Stir until combined and heat on low. When it is heated to your preference pour into a bowl and you can add your favourite milk to it. Enjoy
