I have been meaning to buy a waffle maker for a long time and finally I bought one. It wasn't expensive at all, actually it was $15 at my local grocery superstore and is called everyday essentials. It works great and I love it, it is my new best friend in the kitchen. I have probably mentioned this before, but I'll say it again, I used to not like chocolate since living in Canada at 17 yrs old. The chocolate was always different in England and tasted more milkier. I think the only chocolate I would eat was a twix or snickers bar. Even then I could only take a bite and if I ate anymore I would get a headache so I wasn't a big chocolate lover. Now I enjoy chocolate without all the added ingredients in it. As long as its enjoy life brand I can so far eat it comfortably. These waffles I put in cocoa powder which is the brand cuisine camino and so far I like this one. Here is my waffle recipe.
3 eggs
1 tsp of vanilla extract
2 tbsp of honey
1 1/2 cups of almond flour
1/3 cup of coconut milk
1/4 cup of cocoa powder
1/2 a tbsp of coconut oil, melted
For the syrup
1/4 cup of water
1/3 cup of pure maple syrup
1/2 cup of chopped, cherries ( I used fresh )
1 tsp of honey
Place the cherries, honey, water and maple syrup in a saucepan and heat on medium. Let the cherry mixture simmer until it gets thicker. Prepare your waffle maker by heating it up and following the manufacturers instructions. Beat the eggs in a stand up mixer. Add the vanilla and honey and mix well. Add the almond flour and mix again. Pour in the coconut milk and mix. Sift the cocoa powder into the mixture and combine again until it is all mixed together. Add the melted coconut oil and mix well. Use a spatula to scrape down the sides. Pour the waffle mix into your waffle maker, follow the manufacturers instructions on how much to pour in. Once the cherry maple syrup is done take it off the heat. I used a spatula to push the edges in on the waffles so they came out easier. Place them on the plate and pour the cherry maple syrup over the top. Enjoy.
