OOOOOOOO shortbread cookies!! Yummy! MY favourite cookie at Christmas. These cookies are melt in your mouth good. I know your going to love them as much as I do.
1 cup of almond flour
1 tbsp coconut flour
1 tsp vanilla essence
1/2 cup of palm shortening
2 tbsp cold water
1/3 cup tapioca flour
1/2 tsp salt
1 tbsp honey
1/4 tsp of baking soda
Preheat oven to 350' . Place the palm shortening into your mixer and beat on high. Add vanilla essence and honey. Combine well. Add the sifted almond flour and coconut flour. Mix. Add the salt and cold water. Mix well. Mix in the tapioca flour and baking soda. Mix well and scrape down the sides. Use a teaspoon to form small cookies and place them on a baking sheet lined with parchment paper. Poke four holes just for design on top of the cookie but not all the way through. Cook for 9 minutes. Take out of the oven and let cool. Enjoy
