Stir fry's are my all time favourite, I used to love soya sauce until I discovered coconut aminos which is very similar to soy sauce. Instead of egg noodles for this recipe I made zucchini noodles using green and yellow zucchini. I always found when I made stir fry that my beef was tough and chewy so I researched a little to figure out how to make the beef nice and tender. What I found are two key points; marinate the beef, this seemed to work for making the beef tender and secondly using a good wok. I just started using a wok and I had read somewhere that the small area in the wok is the area that heats the most and this is what makes the stir fry amazing and tender beef. So I took out my wok and marinated my beef and I got an amazingly tasty stir fry.
3 cloves of garlic crushed
1/4 cup apple cider vinegar
1 tsp of cumin
1 tsp of chilli powder
1 lime juice
pinch of salt
1 tsp of ground ginger
1 lb of Stir fry beef ( flank)
1 red pepper
1 orange pepper
1 onion cut into strips
2 yellow zucchinis
2 green zucchinis
1 tsp of ground ginger
2 tbsp of safflower oil for cooking
Place all the ingredients in a bowl with the beef strips. Marinate in the fridge for at least 4 hours or longer. when your ready to cook, spirilize your zucchinis and place on a baking sheet lined with paper towel, sprinkle salt on top and place in a preheated oven at 200' for 20 minutes. In the meantime cook your peppers and onion until soft. Add the marinated beef to the wok and cook for ten minutes. Sprinkle the ground ginger on top. dont cook the beef too long just enough that its not pink anymore. Put the beef mix in a separate bowl and take your zoodles out of the oven and add to your wok, cook for five minutes. Place the zoodles in a bowl and top with the beef mixture, Pour a tbsp of coconut aminos on top. Enjoy
