Sometimes my kids ask me for popsicles for breakfast and I would rather give them popsicles that don't have any refined sugar in them or other additives. I made these popsicles the night before and my two oldest asked for one for breakfast and I felt good about giving them one because I knew what was in them. The only sweetner in these delicious popsicles is honey and very little, about a teaspoon and they are easy to make as well. We are always trying to think of new breakfast ideas because we all get a bit bored. Even though my children still eat cereal they like to eat what I am making to so these popsicles are perfect for breakfast and fresh.
Banana part
2 bananas, not overly ripe. yellow bananas
1 tsp of honey
1 tsp of filtered water
1 tsp of lemon juice
Coconut part
1 can of thick coconut milk
1/2 tsp of honey ( optional)
Blend the banana mixture in a blender until combined. Pour the mixture into each popsicle holder a 1/4 of the way up. Place them in the freezer for about an hour. Take the popsicle holders out of the freezer. Blend the coconut milk and honey if you'd like a sweetner in a blender until combined. Pour the coconut mixture on top of the banana part up to the top line. Place the popsicle lids in. Place in the freezer for 8 hours or longer. To take the popsicles out when you are ready to eat them , run them under warm water and slide them out carefully. Enjoy.
