These raspberry and chocolate crust cheesecake bars are rich and tasty. I used macadamia nuts and cashews for the filling but you can use cashews only if you prefer it still tastes as good.
Crust
1 cup of almond flour
1 tsp of vanilla
1/2 cup of coconut sugar
1/3 cup of palm shortening
1/4 cup of cocoa powder
Filling
1 cup of cashews and 1 cup of macadamia nuts or 2 cups of cashews only soak nuts 2 hours or more
4 tbsp of coconut milk
1 tsp of vanilla
1 tsp of lemon juice
Topping
2 1/2 cups of fresh raspberries
2 tbsp of honey
Preheat oven to 350f. In a stand up mixer mix the crust ingredients together until it looks crumbly. Spoon the mixture into a 9x9 oven proof dish. Cook for 20 minutes. Meanwhile place the raspberries and honey in a saucepan and simmer until the it is thick, about 15 minutes. Place the filling ingredients in a blender and blend on low until the nuts are completely ground down. Take the crust out of the oven to cool for 15 minutes. Pour the filling mixture on to the crust and spread evenly. Top the bars with the raspberry mixture and spread evenly. Place in the freezer for two hours. Take out of the freezer when set and
