Recently the weather has been amazing and the sun is really good for my joints. I dread the winter now especially here in Canada. I will enjoy the sun while we have it here which also means BBQ season and lots of yummy summer foods. Here is my recipe for chili and lime kabobs.
4 chicken breasts cut in large cubes
1/4 tsp of chili powder
Juice from 2 lines
1/4 cup of red wine vinegar
Pinch of salt
2 crushed garlic cloves
1/4 tsp of onion powder
1/4 tsp of paprika
1/4 tsp if cayenne powder (optional) I didn't add this as I didn't want it too spicy for the kids
1 red pepper large pieces
1 yellow pepper large pieces
1 onion large pieces
Add the chicken to a dish. In a separate bowl mix all the ingredients together. Pour over the chicken and wrap it up and place in te fridge for 2 hours. Take out of the fridge and place the chicken onto skewers along with peppers, onions and any other veggie you like. BBQ for about 20 minutes or until cooked through. Serve and enjoy!
