This was an amazing meal and so full of taste with tender chicken breast. I will definitely be making this part of our meal plans. You can use butter for this or ghee but I cant' have butter and I don't like butter so I used palm shortening. My 15 mth old Daughter Layla loved it ans devoured the chicken, covering herself with spinach sauce ha ha. I am happy she enjoyed it. My other two are very picky but my son ate the chicken and said it was so good. Here is the recipe.
3-4 chicken breasts
olive oil
3 cups of spinach probably half a large container.
3 cloves of garlic crushed
1 tsp of dried basil
1 tsp of dried oregano
3/4 cups of palm shortening
pinch of salt
Cook the chicken with some olive oil in a frying pan on medium heat until cooked through. Add the palm shortening and crushed garlic to the frying pan and turn down to low heat. In a food processor blend the spinach until its ground up into small pieces. Add the spinach to the chicken and mix well. Add the herbs and mix. Serve with your favourite sides. Enjoy
