Oh yeah strawberry pop tarts! Well they don't pop up in the toaster but they are pretty close to the real thing and taste so delicious your kids will never know the difference. I gave one to my oldest Daughter and she really liked it and she is usually very picky. When making the jam in this recipe just make sure to drain any liquid from the strawberries. I will explain in the cooking instructions. You can put blueberry jam or apple or any filling you like and any jam you prefer. I used my cinnamon roll recipe for the pastry and it turned out awesome
Homemade jam
2 cups of halved strawberries
1 tsp of lemon juice
1/4 cup of honey
1 tbsp of cold water
Place all ingredients in a saucepan and simmer on medium heat. Use a masher to mash the strawberries as they start to get soft. Stir the mixture now and again as it starts to thicken. Take off the heat when the jam is thick and let cool for ten minutes.If you find there is liquid in your jam you can strain the liquid out, but the fridge will thicken the jam up as well I found. For the pop tarts you have to drain any liquid through a strainer. Pour the jam mixture into a mason jar and refridgerate.
For the pastry
1 egg
1 tsp vanilla
1/3 of a cup of honey
2 cups of almond flour
2 tbsp coconut flour
Makes about 5 tarts
Preheat the oven to 335'. Mix the egg in a stand up mixer. Add the vanilla and honey and mix well. Add the almond flour and coconut flour and mix well. It should start to look like a dough and become one big ball. Using your hands form the dough into a ball. Place a sheet of parchment paper on a flat surface and place the dough on top. Place another sheet of parchment paper on top of the dough. Flatten the dough slightly. Use a rolling pin to roll out the dough so that it is a circle. It doesn't have to be a perfect round circle, mine wasn't. Roll the dough out to a good thickness, not too thin but not too thick. Take the paper off the top and using a pizza cutter cut out the rectangle shape for the pop tart. You can make them any size you want I made some large and some smaller ones. Line a baking sheet with parchment paper. Using a spatula lift the rectangles onto the sheet. Spoon about 2 teaspoons of jam onto the pastry. Place another rectangle on top of the jam lining up the shapes. Use a fork to close the edges like in the picture above. The trick with this technique is to push with your finger on top of the fork so the pastry doesn't come away with the fork. Do this with all of them. Place in the oven for 15 minutes or until a golden brown. Let cool before icing.
to make the icing
4 tbsp of coconut butter
1 tbsp of honey
Melt the honey and butter together in the microwave and stir. i used an icing tip to drizzle it over the tarts. Enjoy!!!!!
