I used to love apple turnovers, even the strawberry kind, they were delicious and I miss them so it was time to make some apple ones, especially when we just went to the farm to apple pick and I now have a bag of apples to use up. My son Owen loves apples though so they will go fast I am sure. So here is my recipe for apple turn overs.
Pastry
1 egg
1 tsp vanilla
1/3 of a cup of honey
2 cups of almond flour
2 tbsp coconut flour
Filling
1/2 cup of palm shortening
1/4 cup of coconut sugar
1 tsp of cinnamon
2 tbsp of coconut flour
5 apples, diced and peeled into small pieces
1/3 cup of water
Preheat the oven to 350'.Place all the apple pieces in a dish with the 1/3 cup of water and cook for 30 minutes until apple pieces are soft. In a saucepan melt the palm shortening for the filling. Add the rest of the filling ingredients and whisk really well. Let that simmer until it gets thicker. Add the apple pieces to the coconut sugar mixture and stir. Keep stirring every minute for 25 minutes. You'll notice there is a bit of water left and the thick sauce below the water and that's ok. Set aside. Mix the egg in a stand up mixer. Add the vanilla and honey and mix well. Add the almond flour and coconut flour and mix well. It should start to look like a dough and become one big ball. Using your hands form the dough into a ball. Place a sheet of parchment paper on a flat surface and place the dough on top. Place another sheet of parchment paper on top of the dough. Flatten the dough slightly. Use a rolling pin to roll out the dough so that it is a circle. It doesn't have to be a perfect round circle, mine wasn't. Using a sharp knife cut out triangle shapes, keep rolling the extra dough and make more triangles. Use the saucepan lid to drain the excess water from the apple sauce. Spoon two tbsps or as much as will fit into the middle of each triangle one at a time. Pull one point of the pastry over to the other point and using a fork or knife close up the edges of the triangles. Place in the oven for ten minutes but turning them over after five minutes. Five minutes is enough for each side or they will burn. Let them cool and enjoy.
