This quiche is really good and perfect for brunch. I made the crust with sweet potato flour from anti grain foods. They have a kickstart program so that they can begin to make and sell this wonderful flour. Try this recipe out and let me know what you think. I know you'll love it
Crust
1 cup of sweet potato flour
1 tsp of apple cider vinegar
1 egg
pinch of salt
1/4 cup of palm shortening
Filling
5 eggs
2 cups of spinach
3 pieces of bacon
1 small onion
1 garlic clove crushed
pinch of salt and pepper
1 low acid tomato
Preheat oven to 340. Place the crust ingredients in a stand up mixer. Combine until it turns into a dough. Place a piece of parchment paper on a flat surface and place the dough on top. Add another piece of paper on top of the dough. Use a rolling pin to roll our the dough to fit your pie dish. Flip the dough into the pie dish. Smooth out any creases or cracks. The good thing about this dough is that you can smooth it out easily. Trim the top and use the left over dough to smooth out any cracks. Place in the oven at 340 for 15 minutes. in the meantime fry the diced onion, garlic and spinach. In a separate pan fry the bacon. Once the bacon is cooked cut into small pieces. Crack the eggs in a separate bowl and whisk. Place the bacon, onion, garlic and spinach on the bottom of the cooked crust. Spread it out evenly. Pour the eggs on top of the bacon mix. Spread evenly. Place in the oven for 35 minutes or until the egg is cooked. Top with you favourite tomatoes.
