I am typing this recipe out the day after making it and the cauliflower does not agree with me. It was an amazing curry and the best one I've ever made, but I won't be eating cauliflower again for a while and that means no cauliflower rice either boo hoo. Even rice is making me bloated and I'm running out of food to eat. I will miss eating this curry because wow it was really good.
1/2 a head of cauliflower
1 onion diced
1/2 cup of raisins
1 cup of water
1/2 a can of coconut milk
1/2 a roast chicken or 2 chicken breast diced
3 tbsp of curry powder
2 tsp of ground ginger
2 tsp of ground coriander
Pinch of salt and pepper
Fry the onion first. Add the chicken and satire for one minute. Add the water and the curry powder. Stir. Add the coconut cream as simmer on medium heat. Add the raisins an cauliflower and spices and stir well. Simmer all the ingredients together for about 5-10 minutes until the sauce gets thick and the cauliflower is cooked. Serve with rice or without. Enjoy
