I had attempted several pie crusts and one night I thought of how to do a crust using pecans. I woke up the next day and wrote down what i thought would work. Well my pecan crust turned out really tasty. I made an orange coconut mousse for the topping. I will add the recipe for that on my blog page.
1 cup of pecans
1 tbsp of coconut oil
1/2 cup honey
1 cup of almond flour
Preheat your oven to 350'. I used a round pie dish, I'm guessing 10". Add the pecans to your food processor and turn on low until they are small pieces. Add the coconut oil, honey and almond flour. Mix on low again until it starts to form together. Spoon the mixture into your greased dish and flatten with a spatula, making sure that the bottom is covered and flat and you can form the crust with your fingers up the sides of the dish to create a crust. Cook in the oven for 10 min. Keep and eye on it as it can cook quite fast. Once the crust is done you can let it cool and add any mousse or filling to it. Enjoy!
