Summer is finally here! I love Summer, it's my favourite season and Fall being second favourite. My Husband and I felt like a summer drink but without the alcohol. I had looked up a lot of drinks and they all contained lots of white sugar and heavy cream. I had coconut cream and pineapple juice and knew I could make a virgin piña colada. This drink screams summer and an exotic taste, such a refreshing drink. Here is my recipe, check it out and enjoy! 1 can of coconut milk ( I used Native Forest as it is half cream and half milk) 1 1/2 cups of pineapple juice 1/4 cup of honey 5 ice cubes Pour the coconut milk into the blender with the pineapple juice. Blend well. Add the honey and ice cubes and blend on ice cube option until well combined. Pour into glasses and add a slice of pineapple to dress your glass up. Enjoy!! Here is another summer drink which is my most favourite right now. Virgin strawberry daiquiri. 8 strawberries 1/4 cup of orange juice 6 ice cubes 1/4 cup of honey Juice of 1 lemon Makes two to four martini glasses Blend all ingredients in a blender. Pour into your glass and serve with a side of lime to garnish. I was craving something Mexican for dinner and I kept thinking what could I make that's different for a change and I thought of taco seasoned chicken breast topped with organic salsa and caramelized onions. Absolutely delicious!! You can add any sides you like to this main meal, we like potato salad in the summer. Although I try to make my own mayonnaise, sometimes I run out of olive oil and I just saw the other day Hellmanns mayonnaise made with olive oil. Yes it has canola oil in it also but sometimes when I have nothing else I end up using store bought and that's the same with ketchup too. I'm not perfect in the paleo diet when it comes to condiments, but I try my best. Try this recipe out and see what you think. 2 chicken breasts Taco seasoning (found in recipes) 1/2 a lime juice Organic salsa 1/2 a jar 1 onion shaved thinly Mix taco seasoning in a small bowl and stir. Place chicken in the bowl and mix them up with the spices until fully covered. Squeeze some lime juice over the chicken. Place the chicken in a pan and cook with some oil until cooked through. While the chicken is cooking shave the onion using a mandolin and place in a separate pan and sauté with some oil. Place the chicken on a plate and top with salsa and onions. Enjoy!! |
