This side dish is my favourite lately and its so easy to make. I added brussel sprouts this time because I hadn't had brussells in a long time and I asked my daughter what vegetable would you like to try? I am trying to get my son and ten year old daughter to eat more vegetables and this is the one she picked, which surprises me, but hey that's great. I added my french inspired dressing to this vegetable medley which made it even better but you can add your own or leave it how it is, either way it tastes great. I also added white potato but again you can add sweet potato instead.
2 carrots sliced in half and halved again
1 zucchini, sliced
1 yellow zucchini, sliced
5 brussell sprouts, washed and cut in half
1 white potato or 1/2 a sweet potato, diced
1 green pepper, diced
1 tbsp of safflower oil for cooking
Add all the ingredients to a frying pan and sautee until all vegetables are soft. Place on a plate and drizzle my french inspired dressing on top or add your own. Enjoy
