I will be returning back to work in November as an Educational Assistant so I work in a school which means nut free lunches. I have been trying to come up with as many snacks and foods as I can that don't have nuts in them and I am proud to say the recipes that I am creating are turning out perfect and I am so excited to share them with you. I used silicone liners for these muffins and I really liked them, so easy to get the muffin out. This muffin has the perfect moisture and fluffy texture, I hope you enjoy them as much as I do.
Makes: 11 muffins
Cook time: 25 minutes
Prep time: 10 minutes
2 eggs
1 tsp of vanilla extract
1/2 cup of honey
1/4 cup of melted palm shortening
1/2 cup of coconut flour
1 tsp of baking soda
2 tbsp of coconut milk
2 tbsp of boiling water
3/4 cups of blueberries
11 slices of banana
Preheat the oven to 350'. Put your kettle on to boil water.Beat the eggs in a stand up mixer. Add the vanilla and honey and mix well. Melt the palm shortening and add that to the mixer and mix on low. Add the coconut flour and mix again. Scrape down the sides and mix again. Add the baking soda while mixer is on. Add the coconut milk and mix. Add the blueberries and mix. Add the boiling water, two level tablespoons and mix again until combined. Spoon the mixture into the liners about 3/4 way up. Add a slice of banana to each muffin and place in the oven for 25 minutes or until cooked through. When they are cooked through take them out nd
