I used to love pasta salad with the Italian dressing all over the pasta shells, but now pasta is no longer in my life. I thought of creating the same type of recipe but with zucchini noodles. I added red onion, and some mild cheese blocks. I have just about reached my limit for cheese this month so I need to slow down with the cheese intake, but this recipe is so good. My Husband loved it too with our steaks that we had marinated earlier. You can add any vegetable to this recipe like mushrooms or carrots.
1 red pepper
1 green pepper
1/2 a small red onion, sliced thinly
3 large green zucchinis for noodles. ( check out my recipe for making noodles)
Dressing
1 cup of light tasting olive oil
1/4 cup of apple cider vinegar
1 tsp of Italian herbs
1 tsp of Oregano
s&p
1 garlic clove crushed
2 tbsp of honey
Make the noodles ahead of time by following my directions under the title "more". Mix all the dressing ingredients together in a jar or salad dressing bottle. Dice the peppers and shave the onion using a mandolin. Add the peppers and onion and any other vegetable you prefer to the noodles. Shake the dressing and pour half the mixture over the salad. If you like more dressing, pour a little more. Serve with your main entree. Enjoy
