I love love love peanut butter cookies, all time favourite cookie of mine so I had to create a really good peanut butter cookie, and that is exactly what I did. These are really tasty and so yummy, plus they are paleo friendly, no dairy, no wheat and no refined sugar.
1 egg
1 tsp vanilla extract
1/4 of palm shortening melted
1/2 cup of honey
3/4 cup of all natural peanut butter
1 1/4 cup of almond flour
1 tbsp coconut flour
1/4 tsp baking soda
1 tsp salt
Preheat oven to 350' and place a fork or spoon in the freezer. Beat the egg in a stand up mixer. Add the vanilla, melted palm shortening and honey. Mix well. Add the peanut butter and mix well again. Sift the flours into the peanut butter mixture and add the salt and baking soda. Mix well again. Using the fork or spoon from the freezer to flatten the cookies onto a baking sheet lined with parchment paper. Place in oven for 10-12 minutes or until golden brown. Take out of the oven when they are done and let cool. Enjoy.
