I posted yesterday my slow cooker pulled pork, which was delicious and we had left overs. I came up with a pot pie recipe that turned out to be really tasty and easy to make. I used my pizza crust recipe minus a few ingredients for the pastry top and it was really good. So if you have left over pork from the day before, here is a perfect recipe for just that. If you want to make this recipe and you don't have pulled pork from the day before I have included the recipe for the slow cooker. Once the pork is cooked you can bake the vegetables and add the pulled pork to the casserole.
Recipe for pulled pork
1 pork shoulder
1/4 cup of pure molasses
1/4 cup of coconut sugar
1/4 cup of honey
pinch of salt
1 can of tomato paste
1 onion, diced
2 garlic cloves, crushed
2 tbsp of apple cider vinegar
2 tbsp of coconut aminos
1 tsp of chilli powder
Place the pork shoulder in the slow cooker. Add all the ingredients and stir really well so that its all mixed in with the meat. Cook on high for 5-6 hours.
Pulled pork pot pie
Left over pulled pork and liquid
1 zucchini, diced
4 small carrots diced
1 onion, diced
1 summer squash
1/4 cup of water
1 sweet potato diced
Topping
1 egg
2 tsp of apple cider vinegar
1 cup of almond flour
1/3 of a cup of coconut flour
pinch of salt
2 tbsp of palm shortening, melted
Preheat oven to 350'. Place all the cut up vegetables in a casserole dish along with the pulled pork and the pork liquid left over from the day before with 1/4 cup of water. Cook for 1 hour or until vegetables are soft. To make the pastry top mix the egg in a stand up mixer using a dough attachment. Add in the rest of the ingredients for the topping. The mixture should look like dough. Place a sheet of parchment paper on a flat surface and roll the dough into a ball. Place the ball on the paper. Place another sheet of parchment paper on top. Using a rolling pin to roll out the dough to fit on the top of your casserole. Once the vegetables are soft, take the casserole out of the oven and carefully flip the pastry top onto the dish. The pastry doesn thave to sit on the dish, I placed mine in the inside. flatten it out and then place in the oven again for fifteen minutes until top is slightly golden brown. Take out of the oven and serve.
