Tacos are the best and I thought what could i make that my kids love and it be different? Well I thought of taco casserole with sweet potato noodles. Sounds delicious doesn't it? well it was and I had seconds. So here is the recipe. you will need a mandolin and a spiralizer for this recipe
1/2 a large sweet potato
1 onion shaved by mandolin
1lb of ground beef
1 tsp cumin
1 tsp cayenne pepper
1/2 tsp of garlic powder
1/2 tsp of onion powder
1 tsp of paprika
1 tsp of chilli powder
1 tbsp of water
pinch of salt
1 jar ( 500 ml ) of organic salsa ) I use Neal brothers mild salsa
1 large tomato, sliced
Preheat oven to 350. In a 13 x 13 square casserole dish place the shaved onion. Cook the ground beef in a frying pan and add the spices and water and stir. Cook until the beef is thoroughly cooked. Pour the beef on top of the onion and spread evenly. Place the tomato slices on top of the beef. Pour the salsa over the top. Spiralize the sweet potato according to the manufacturers instructions. Saute the the noodles until thy are slightly soft. I kept mine a little crunchy to have a bit of that crunch in tacos. Place the noodles on top of the salsa and place in the oven for 30 minutes. Check on it half way so the noodles don't burn.Serve and enjoy!!
