I was craving a bread just like this, something nutty but fruity too and this fruit and nut bread turned out perfect. I love it so much I keep snacking on it. You can add dried cherries if you'd like or dried blueberries.
4 eggs
1/4 cup of honey
1 tsp of vanilla extract
1/3 cup of melted palm shortening
1/2 cup of coconut milk
1 1/4 cups of almond flour
2 tbsp of coconut flour
1 tsp of cinnamon
1 tbsp of coconut sugar
1/2 cup of raisins
1/2 cup of currants
1/4 cup pecan pieces
1/2 tsp of baking soda
Place a heatproof dish full of water on the bottom of the rack in the oven. Preheat the oven to 350. Line a loaf pan with parchment paper. Beat the eggs, vanilla and add the honey and mix well. Add the melted palm shortening and mix again. Add the coconut milk and mix. Add the almond flour and mix well. Pour in the coconut flour and baking soda and mix well. Pour the raisins, currants and pecan pieces into the mixture and combine well. Pour the mixture into the loaf pan and spread evenly. Sprinkle the coconut sugar over the top and place in the oven for 50 minutes or until cooked through. Let cool and enjoy. Use a spatula to loosen the sides of the bread.
