I had tried out other recipes for brownies and found they were really eggy and I don't like it when I can taste the egg. I never used to like chocolate because it gave me headaches but since making these brownies I don't get headaches anymore. Try these brownies and let me know how you like them. Just a tip I find when I put them in a container after coming out of the oven they stay more moist.
Makes: 14 about brownies Preparation time: 20 minutes Cook time 35 minutes
3 eggs
1 tsp of vanilla extract
3/4 cup of honey
3/4 cup of dairy free chocolate chips
1/2 cup of palm shortening
1/3 cup and 1 tbsp of coconut flour
2/3 cup almond flour
3/4 tsp baking soda
pinch of salt
1/2 cup of cocoa powder
3 tbsp of boiling water
Preheat oven to 350. I put a small oven proof dish filled with water on the bottom rack to help the baking rise. Melt the chocolate chips and palm shortening in a small heatproof bowl over a saucepan of simmering water. Meanwhile in a mixer combine eggs, vanilla and honey. Sift the flours, cocoa powder, salt and baking soda in a separate bowl and add to the egg mixture. Once the chocolate and palm shortening has melted add it to your mixer and combine. Once combined add 3 tbsp of boiling water, ( I use the water from the saucepan) and mix together; you may have to use a spatula. Grease the 9"x 13" pan with palm shortening and pour the mixture in and place in the oven for 35 min. Depending on your oven it may need longer or shorter time to cook. When the brownies are ready, take them out of the oven, (you can always check by inserting a knife to see if it comes out clean) and cut them into squares and transport to a container.
