Mmmmmm crepes. These crepes are good with maple syrup and fruit or even as a breakfast burrito. Check out my burrito recipe. I made these this morning for a mexican recipe I was trying out. You can use these crepes in any recipe that asks for tortillas or wraps.
4 eggs
pinch of salt
half a can of thick coconut milk (native forest is thick )
3 tbsp of coconut flour sifted.
Beat the eggs in a stand up mixer. Add the coconut milk and keep mixing. Sift the coconut flour and salt into the mixture while the whisk is on low so that the flour doesn't clump up. Heat the frying pan or crepe maker, I use my frying pan and heat with coconut oil. Once you see the oil bubble it means its ready so pour the batter into the pan and let the crepe cook. If its bubble on top and not runny anymore then you can flip it. Keep doing this until your batter is all gone. Serve with fruit or your favourite filling.
