Everyone loves cobblers and this blueberry cobbler is so delicious. Dairy free, refined sugar free and wheat free makes this cobbler even better and a dessert that the whole family will enjoy. I saw that I had lace doilies for this picture and it was a perfect touch, this recipe reminds me of a Grandmas cobbler in the country. For the topping I used my chocolate chip cookie recipe, minus the chocolate chips, this topping was also used for my breakfast apple cakes. Enjoy this delicious country cobbler.
2 cups of blueberries
1/4 cup of filtered water
1 tbsp of coconut sugar
1 egg
1 tsp of vanilla extract
1/4 cup of palm shortening, melted
1/2 cup of honey
1 1/2 cups of almond flour
2 tbsp of coconut flour
1/4 tsp of baking soda
pinch of salt
Preheat the oven to 350'. Place the blueberries in a 9x9 square oven proof dish. Pour the 1/4 cup of water over the blueberries and sprinkle the coconut sugar on top. For the topping beat the egg in a stand up mixer. Add the vanilla and honey and mix well. Add the melted palm shortening and mix. Add the flours and baking soda and salt. Mix well. Spoon the mixture on top of the blueberries and spread evenly. It is okay if it doesn't spread perfectly. Place in the oven and cook for twenty minutes or until the blueberries are bubbling and the
