Potato salad is one of those salads that is a must especially in the summer and I've had my fill of white potatoes recently so I thought sweet potato would be nice. I probably added too much mayonnaise to my salad because I looove mayonnaise but you can add as much as you like. i hope you enjoy this sweet potato salad.
3 large sweet potatoes peeled and diced
4 green onions, diced
Mayonnaise
2 eggs
1tsp white vinegar
pinch of salt
1 tsp lemon juice
1 tsp chives
1 tsp dill
3/4 cup of light tasting olive oil
Boil or steam the potatoes until soft. Meanwhile add the mayonnaise ingredients to a food processor and mix on low until it looks thick like mayonnaise, it will get thicker with the oil added. Pour a drop of oil into the food processor, drop by drop slowly and then in a steady stream. Keep the processor going on low the whole time. The mayonnaise should look quite thick now. Add the dill and chives and mix again on low. Strain the potatoes that you steamed or boiled and let cool. Add the mayonnaise, as much as you prefer to the potatoes. Add the chopped onions and mix well. I actually added boiled egg to the salad but thats up to you. Serve as a side or as main lunch. Enjoy.
