These dairy free and refined sugar free raisin butter tart squares are absolutely delicious. They are addictive. I am tempted to make more. You have to try these.
Crust
1 cup of almond flour
1 tsp of vanilla extract
½ cup of coconut sugar
1/3 cup of palm shortening
Top
2 eggs
1/4 cup of palm shortening, melted
1/2 cup of coconut sugar
1 tsp of vanilla extract
3/4 cup of sultana raisins
Preheat the oven to 350. In a mixer mix the crust ingredients until the palm shortening has mixed well with the rest of the ingredients. It will look crumbly. Pour the mixture into a 9x9 oven proof dish and flatten it so the top is flat and even. Place in the oven for 10-12 minutes. Take it out of the oven and let it sit while you make the top. To make the top place the ingredients in order in a bowl and beat with a whisk. Pour the mixture on top of the crust and spread it out evenly with a spatula, gently though. Place in the oven again for 15-20 minutes or until you can see that the center isn't runny. The top should have a skin to it or cracked look but not runny. Take them out of the oven and use a flat knife to slice them into squares. I used a spatula to remove each slice from the dish and placed them on a rack to cool. Enjoy!!
