Pickled beets who would have thought that the store bought jars had added ingredients in them? not me. I should have looked at the ingredients way before now but I was shocked to see more than just beets and vinegar. I decided to make my own and see how it turned out. My Husband tried pickling eggs not long ago and it didn't turn out how he wanted, so for some reason I felt I was doomed in the pickling world. I researched a little on pickling vegetables and had an idea of what goes into the process, which by the way is very easy. I measured out what I needed for my jar and smelt the liquid to find the right amount. Smell? yes its odd, but it worked for me for this recipe. I used a 2 1/2 cup jar. I hope this helps. I also had some beets that didn't fit so i made another jar.
1/2 cup of water
1/2 cup of white vinegar
1 tsp of honey
6 whole cloves
pinch of salt and pepper
4 medium sized beetroot
Cut off the stalks on the beets. Wash them. Place them in a saucepan with water. The water should just about cover the beets. Boil them for about half an hour to forty five minutes or until they are soft. Drain the water out of the saucepan and let them cool for five minutes or until your able to pick them up. Take the peel off the beets, it will slide off easily. Slice the beets to the thickness you prefer. Place the beets in your jar. Take a one cup measuring cup and fill half with the water and then fill the rest with vinegar, which works to be half a cup. Pour this into your jar over the beets. Add the honey and stir as best you can. Add the cloves and salt and pepper and stir again. Close the lid and place in the fridge for at least a day or two. I literally just made them this morning so I did try them and they are so good, and even better in a day or two. Enjoy.
