I made this recipe a few weeks ago and had forgotten to post it, but it is perfect timing because Fall is approaching and this recipe is perfect for Fall especially if you you don't eat turkey you can cook this chicken instead. The taste is amazing and tastes just like Fall with cranberries, apple and spices.
2 chicken breasts
1 apple, peeled and diced
1/3 cup of dried cranberries
2 green onions diced
1 tsp of Italian herbs
1 tsp of oregano
pinch of salt and pepper
1/2 cup of pecans ground up
1 egg
In a bowl mix the cranberries, apple pieces, green onions and spices together. In another bowl put the pecans in and in a separate bowl the whisked egg. Cut the chicken breasts along the sides to make a pocket. Dip each piece of chicken into the egg and then roll in the pecan pieces. Stuff the cranberry and apple mix into each chicken breast pocket. Place the chicken breasts in a dish until the chicken is no longer pink and completely cooked through. Serve with your favourite vegetable or side. Enjoy.
