I looove peanut butter cookies and since I've started a healthy way of eating I now enjoy chocolate, the good natural chocolate. I also used to love peanut butter cups, I still love them but my tummy will not tolerate them. These cookies are so good with an awesome combination of the two.
1 egg
1 tsp vanilla
1/4 cup of honey
1/4 cup of palm shortening melted
1 1/2 cups of almond flour
1 tbsp coconut flour
1/2 tsp baking soda
pinch of salt
2 tbsp of peanut butter
1/3 cup of chocolate chips
Preheat oven to 350'. Line a baking sheet with parchment paper. In a stand up mixer beat the egg. Add the honey , palm shortening and vanilla and mix well. Add the almond flour, coconut flour, salt, baking soda and mix well. Half the dough and place one half in a separate bowl. Place a saucepan on the stove with water filled 1/3 of the way. Place a heatproof bowl on top with the chocolate chips in. Heat on low until the chocolate chips have melted, do not let the water boil. Take the chocolate off the heat and pour it into the separate bowl with the cookie dough. Mix it well. spoon the peanut butter into the other half of the dough in the stand up mixer and mix well. Take a small spoonful of each dough and place together on the baking sheet so that when they cook they will become one cookie. Do this until you are all out of cookie dough. Cook in the oven for ten minutes or until golden brown underneath each cookie. Take out of the oven and let cool before eating them. Enjoy.
