Now that I have my veggie spiralizer I have been excited to use it with different vegetables. So far I have tried the zucchini noodles which are my favourite, in this recipe I used a sweet potato on the smallest blade. I would suggest using a thicker more rounder sweet potato which can be hard to find, I had a longer potato so sometimes the curl of the thick noodle broke off, but that's ok it was still tasty. Try this marinade out on the chicken, It is so good. I made this for myself as my Husband was working and I had left overs for his lunch the next day, if you need to double the recipe it'll still turn out great.
Marinade
2 chicken breasts, diced into cubes
1/3 cup of olive oil
2 tsp Italian herbs
1 tsp Oregano
1/4 cup of red white vinegar ( apple cider vinegar would work too)
1 garlic clove
1/2 a lemon juice
2 sweet potatoes curled
1 red pepper, small strips
Add the chicken to a bowl with all of the ingredients for the marinade. Let the chicken sit in the marinade as long as possible, a couple of hours is fine. I actually let it sit for half an hour while I cooked everything else. Peel your sweet potatoes and cut in half. Use each half in your spiralizer or as directed. Pour your chicken into a frying pan with the marinade and saute until cooked through and browned slightly. Saute the sweet potato noodles so they are slightly soft, depending on how you like them you can cook them longer. In a separate pan saute your red pepper until soft. Place the noodles in a dish, add the red pepper slices and then add your chicken on top. A little bit of salt and pepper and voila.
