I love chocolate chip ice cream and this recipe was a must. You can add as many chocolate chips as you like, I added about 1/2 cup. If you can find organic or natural food colouring then you can use that. I used my regular green colouring that I had in my cupboard. Also organic mint extract can be used as well. Follow the directions for your ice cream maker. My ice cream maker I place the silver cylinder in the freezer overnight so its ready the next day.
2 eggs
1 can of coconut milk
1 tsp vanilla
1/2 cup of honey
3 drops green food colouring
1/4 tsp of mint extract
1/2 cup of mini chocolate chips dairy free
Place all ingredients in order into a mixer and blend well. Take out your cold ice cream maker cylinder and pour the mixture into it. Follow the directions. Mine i have to pour the mixture into the cylinder and turn the handle twice. Then in 5 minutes I stir the handle again twice, keep doing this for about 15 minutes and the ice cream should start to freeze and thicken. You can place back in freezer to store. Enjoy.
